
At its height, the 25-acre walled kitchen garden associated with the Palace of Versailles in Versailles, France was one of the world’s largest kitchen gardens. The garden footprint is still intact, with a significant portion of it still being worked. Note the brilliant idea of planting espalier fruit trees to mark the edges of areas planted with vegetables. If you have a kitchen garden plot that is 20 square feet (6.25m) and you plant trees on 6 foot (2m) centers, you can plant roughly 14 trees in that border. I was inspired by the Potager du Roi to plant espalier apples in front of my house to create my front fence. Fourteen espalier fruit trees produce a lot of fruit! And, basically, it takes up no space in your garden.
