Flat breads offer a vast world of breads that are largely outside today’s European bread tradition. This isn ‘t because flat breads were not part of Europe’s culinary tradition — just that they tended to be breads of the poor and thus as Europe became richer flat breads tended to lose favor. Flat breads can be baked many ways, including in ovens, but I think the most interesting aspect of flat bread production is that so many flat breads are baked using means that are portable, impromptu, and could have been used as a baking method a long long time ago. I will be pulling out of YouTube ethnographic videos that explore a wide range of flat bread techniques.
